Black light!! It will show all the urine everywhere. Check the drywall too. Or your carpet cleaners could do it.

I would recommend walking through the unit with your tenant upon move out with the carpet cleaners who can show them any potential damage.

Could you use a light wand that would show the stains in the carpeting and take pictures? Seems that that would be the best way to prove a smell .
